Basil & White Truffle Avocado Toast with Spicy Collards

This is a really easy, 10 min lunch I made on a budget. It’s hearty, healthy, handsome, and tastes gourmet!

WHAT YOU’LL NEED (serves 1):

  • 1 ripe, organic avocado
  • 2 slices of organic, sprouted bread
  • 2 whole basil leaves
  • slice of organic lemon
  • 1/2 tsp white truffle oil
  • 1 cup organic collard greens
  • 1 tsp of nutritional yeast
  • 1 tsp tahini salad dressing (I prefer Amy’s Goddess Dressing)
  • 1 tsp hot sauce

DIRECTIONS:

  1. Toast the bread until golden
  2. Mash the avocado with the truffle oil
  3. Spread onto the toast with a fork, and top with basil leaves.
  4. Boil the collard greens for about 2 mins (you don’t want to overcook them, they should remain bright green)
  5. Strain the Collards, then add the dressing, nutritional yeast, and hot sauce. Mix well.
  6. Serve with a slice of organic lemon, and S&P to taste.

    Not to be the vegan police, but I have often wondered whether or not truffles should be considered vegan since they use pigs and dogs to find them. Any thoughts?

    sounds good to me. and i ‘m such a food nerd i guessed that was sprouted bread from the picture. one of my kids only likes it as french toast. c’est la vie.(c’est la guerre. don’t change your face, just change your hair. as my bro used to say.
