Killer Bacon Bugs, Bid on Stars & Recycling Myths

1. An Op-Ed published by the New York Times last week has linked killer MRSA, also known as the antibiotic-resistant "Flesh Eating Bacteria" to more than 18,000 deaths per year in the US. That's more than AIDS. And what is the source of this superbug? You guessed it: cheap pig products. "Probably from the routine use — make that the insane overuse — of antibiotics in livestock feed. This is a system that may help breed virulent “superbugs” that pose a public health threat to us all."

A small Dutch study found pig farmers there were 760 times more likely than the general population to carry MRSA (without necessarily showing symptoms), and Scientific American reports that this strain of MRSA has turned up in 12 percent of Dutch retail pork samples. Now this same strain of MRSA has also been found in the United States. A new study by Tara Smith, a University of Iowa epidemiologist, found that 45 percent of pig farmers she sampled carried MRSA, as did 49 percent of the hogs tested.

storm, I can only wonder how these animals that are smarter than dogs (yet some dogs chew delightfully on their dried ears & limbs) will fare int he coming months? And au contraire Mike Hale and the Wiles's community, we can all eat veggies and thrive.

Is recycling really all that it claims to be? Have you ever been confronted by someone who is a total recycling skeptic and didn't know what to say? But one thing is certain. We do not have infinite resources on this planet, and people who are in the industries that use up these resources, and are in positions to do something about it have a responsibility to figure out how to not leave devastated ecosystems for future generations. Just because the recycling systems aren’t perfect does not justify throwing caution to the wind and continuing ‘business as usual’. The real issue is that recycling is not enough. Reuse is better, and ‘green’ products with toxic by-products need to be more thoroughly sourced, because there are products that come from closed loop systems, also known as EIN Eco Industrial Networking or EIP- Environmental Industrial Parks. But again, the root problem is still there.

One major problem is that recycling systems are often based on dollars as opposed to ecological and personal well-being. Dollars are abstract and when you work towards achieving such an abstraction (as opposed to working towards sustainability, good health, community, friendship, etc) the consequences to the physical world become secondary, when in fact ecosystems are primary and without functioning, healthy ones, we’d all be gone. The reason recycling appears to be useless to some people is not because re-rendering products into new products is impossible – it’s because they are seeing the effects of basing a recycling system upon a system that in itself is not sustainable. Does that mean we shouldn’t recycle? Of course not! It means we should do that, and much much more! It also means the problems haven’t been solved and we need to get some serious critical thinking done.

"The UN Food and Agriculture Organization (FAO) has estimated that direct emissions from meat production account for about 18% of the world's total greenhouse gas emissions," he told BBC News, "So I want to highlight the fact that among options for mitigating climate change, changing diets is something one should consider." 2. Cooking Up A Storm in Nantucket

I took a few days off to lay on the beach and eat good vegan food with some amazing friends in Nantucket this past week. We made so much amazing food that I'll have to spend all week at the gym. We cooked day and night and could have given any top restaurant a run for their money. I especially enjoyed the pistacio-crusted seitan with mushrooms in a balsamic-reduction with garlic-roasted potatoes and the fresh lemon-tahini-garlic hummus. RECIPES: For the Pistacio Crusted Seitan with Roasted Garlic Potatoes (serving 4) you'll need: • 1/2 cup of pistacios • 1 Vegan Bullion cube • 4 tbs Vegan Butter • 2 tbs Olive Oil • 1/2 cup Balsamic vinegar • 1 lb of seitan • 2 cups of mushrooms • 6 cloves of garlic • 3 small/medium red potatoes • 1 tbs Nutritional Yeas Directions: • Marinate the seitan in the olive oil, half of the vinegar, nut. yeast, pistacios, and salt & pepper to taste for at least 30 minutes. (Seitan is quite absorbant). • Put the additional Balsalmic in a small saucer and bring to a simmer on low heat. Let this slowly reduce over about 20 minutes. Meanwhile: • Heat a skillet with 2 tbs of the Vegan butter in it. Sauteé 3 cloves of garlic, the mushrooms and the bullion cube. Add the seitan mixture including all the remaining liquid in the marinade. Cover and let stand for about 15 minutes on medium heat. Flip the seitan and continue cooking for an additional 15 minutes. (You can add 1/4 cup of red or white wine at this stage if additional savory flavor is desired.) • Cut the 3 potatoes in half, and place on a baking-sheet face-up. Melt the remaining 2 tbs of butter, adding the remaining diced garlic. Using a teaspoon put the garlic-butter on the open face of each potato half. Bake on 350 for 25 minutes until the top is golden brown and the potato is soft. • Once the seitan had crisped (not burned!) edges, plate beside the potatoes and drizzle the balsamic reduction and serve! for the Hummus, you'll need: • 2 cups of garbanzo beans (not dry). • 1/2 cup tahini • 1/4 cup lemon juice • 2 cloves fresh garlic • 1 tsp salt • 1 tsp pepper • 1/4 cup water • 1 cube vegan bullion (I use Rapunzel with no salt) • paprika and olives for decoration Directions: •Simply puree all the ingredients in a food processor or blender until smooth.

RECIPES OF THE WEEK: Cheezy Kale Caesar Salad Raw Food Recipes by Alex Malinsky (www.RawGuru.Com) This recipe is so tasty and so good for you!! A perfectly refreshing summer salad!

Ingredients: 1 bunch green kale (chopped) 1/2 bunch dino kale (chopped) 1/2 head romaine lettuce (chopped) 2 tbs. minced leek Dressing: 3 /4 cup pure water 1 lemon (juice only) 1 tbs. agave nectar 1/2 cap pine nuts 1/2 cup really raw cashews or macadamia 1 clove garlic 1 tsp. dulse or nori flakes 1/4 tsp. or to taste Celtic Sea Salt

Add all the greens and minced leek into a large bowl. Prepare the dressing by blending everything till creamy and smooth. Taste and adjust any seasoning if needed. Add more agave if it needs more sweetness, more lemon juice if it needs to be more acidic. Pour the dressing over the greens. Massage the dressing into the greens until everything is nicely covered. Taste and season with salt if necessary.

Lavender Goji Limeade 2 cups distilled or pure water 2 lemons (juice only) 3 limes (juice only) 2 tbs. agave nectar 2 tsp. goji berry powder 1 tbs. fresh lavender leaves (chopped) Mix everything together in a glass bowl. Let the lavender leaves steep in the liquid for 1 hour at room temperature. Strain through a nut milk bag. Chill for a few hrs before serving. Garnish with a sprig of lavender. Ed’s note: want to make this a naughty limeade? Add organic vodka for a tasty summer night decadent cocktail!

· Her name is Willow. Named by the PHS staff because she is so sweet and calm. She has been at the shelter since 1/16 and is the first dog on the PHS web page, ID #A225501. She is a 4 year-old pit bull, but she is really just a lap dog trapped in a pit bull's body. She is one of the sweetest and clam dogs I have been around at the PHS (that includes all breeds). She is amazing looking. Just a beautiful dog with a mocha colored fur that is incredibly soft. See her face here. She needs to be rescued ASAP or she will get put down.
