Kookie Karma is an awesome vegan company that was created in 2004 by UCLA grad, Juli Novotny. Juli’s raw, vegan, organic, http://gliving.com/wp-content/uploads/2009/11/jnovotny.jpggourmet pre-packaged snack line has an array of delicious cookies, chips & granola! One of my favorites is the “Salt & Pepper Crawkers”; made from an array of delicious veggies (kale, celery, parsley, carrots, to name a few), walnuts, flaxseeds, rosemary & garlic. These crunchy and peppery delights are just as addictive as potato chips, but they’re a healthy version! Plus, all of Kookie Karma’s products are free of most common food allergens (gluten, corn, soy, dairy, baking soda/powder, sulfites, preservatives, sugar & wheat). I also dig Kookie Karma’s cookies; their “Raw Banana Bread” is like a slice of banana bread in cookie form; light, moist & subtly sweet, it’s the perfect delicious treat! There are also 7 other flavors: “Cherry Cashew”, “Raw Lemon Fig”, “Holistic Chocolate Chip”, “Holistic Carob Chip” (with a hint of coconut) and “Holistic Choco Lot”, all of which create an awesome roller coaster ride for your tastes buds!! So, I guess it’s obvious that I am a big fan of Juli’s company and I believe that whatever you are doing right now, it would be better if you had a Kookie Karma snack there with you; so don’t waste any time, check out Juli’s terrific site: http://kookiekarma.com/ and get some Kookie Karma in your life!!

Hearty Banana Berry Flax Oatmeal

I’ve been experimenting with eating oatmeal for breakfast on a daily basis. My grandpa, who just turned 90, ate oatmeal every day and claims it’s his “secret”. In this incarnation, I’m packing it full of protein, antioxidants, potassium, and iron. Did you know that flax seed has six-times the essential omega fatty acids than fish oil? If you are vegan or vegetarian and you’re not eating flax, you better get started! This super-food is crucial for heart, brain, and almost every organ’s health. The anti-inflammatory and cancer reducing sweet burst of blueberry is loaded with phytochemicals – and the iron and zinc-rich maple syrup and natural sweetness of the B6 and potassium-stocked banana make this a breakfast sure to give you a kick in the ass to start your day.

WHAT YOU’LL NEED (serves 2):

  • • 2 cups of organic oats (not instant)
  • • 1 cup of water
  • • 2 cups almond milk
  • • 1 Tbs Maple Syrup
  • • 1 Large Banana
  • • 1/2 cup blueberries
  • • 1/4 cup flax meal (ground flax seeds)
  • • Handful of almonds (or your favorite nut)
  • • 1/2 tsp cinnamon
  • • 1/2 tsp vanilla

DIRECTIONS:

  1. 1. Combine the water, almond milk and oatmeal and bring to a boil over medium heat.
  2. 2. Bring down to a slow simmer and stir in the flax, maple syrup, cinnamon, vanilla and nuts.
  3. 3. After about 5 minutes the oats should be cooked, so turn off the heat.
  4. 4. Last, add the banana and blueberry – (you don’t want to cook them so they retain all their nutritional integrity).
  5. 5. Serve hot!

Raw Kale Salad w/ Avocado & Tomato

RawKaleSalad

Most people are surprised to find out that you can eat kale, raw. This raw kale salad is hearty, filling, and delicious. It’s packed with super healthy foods that will give you enough protein, vitamins and minerals to make it to the end of the day focused and strong! I’ve been eating it for lunch a couple times a week, and it never disappoints. As always, make sure to use organic ingredients!

WHAT YOU’LL NEED (serves 2):

  • 5 leaves (with stems) of uncooked, green kale
  • 1 large  tomato
  • 1 avocado
  • 1/4 red onion
  • 2 cloves garlic
  • 1 tbs apple cider vinegar
  • the juice of 1  fresh lime
  • 2 tbs flax meal
  • 1 tsp nutritional yeast
  • handful of cilantro
  • salt & pepper to taste

DIRECTIONS:

  1. Roll the kale leaves together into a tight scroll, longways. Starting at one end, thinly slice all of it.
  2. In a large mixing bowl, mash the avocado.
  3. Chop the tomato & onion, add to bowl.
  4. Dice the cilantro & garlic, add to bowl.
  5. Add in the Kale and, using a fork,  mash it into the other ingredients.
  6. Pour the vinegar,  and squeeze the lime into the bowl.  Add the yeast & mix well.
  7. Top with flax meal (to make, simply put dry flax seeds in a blender)
  8. Serve and enjoy.

BAMBOOZLED: ‘Spinning’ Eco Threads

Bamboo

I was shocked to discover that Bamboo Rayon is not an eco-friendly fabric! Thanks to Mark Morris of Turk & Taylor, who recently exchanged Emails with me regarding certain processes by which plants like bamboo are turned into soft threads, I was directed to this article which discusses in depth, the toxic chemicals and hazardous conditions surrounding a seemingly benign industry.

Greenwashing

The major distinction here is between a rayon and a linen. Rayons are typically made using large amounts of hazardous chemicals like bleach, carbon disulfide, and sodium hydroxide (AKA: lye, caustic soda), known for a sleuth of environmental and health hazards, in a process called hydrolysis alkalization. Aside from the shock of finding out that something being touted as almost beneficial to the Earth and those of us living on it, I feel betrayed by those reaping the benefits of this perfect example of greenwashing.bambooBamboo yarn

It’s no surprise since the EPA has been a huge failure, and on top of that, even their limited scope cannot touch most of the “Free Trade” protected environmental catastrophes otherwise-known-as textile factories in other countries with little environmental regulations.

There are two typical ways in which bamboo is turned into fabric. One of them is considered sustainable – utilizing enzymes, one of them is not. Of course, the cheaper way is the dangerous one:

Bamboo the plant is wonderfully sustainable; bamboo the fabric isn’t so easy to categorize. There are two ways to process bamboo to make the plant into a fabric: mechanically or chemically. The mechanical way is by crushing the woody parts of the bamboo plant and then use natural enzymes to break the bamboo walls into a mushy mass so that the natural fibers can be mechanically combed out and spun into yarn. This is essentially the same eco-friendly manufacturing process used to produce linen fabric from flax or hemp. Bamboo fabric made from this process is sometimes called bamboo linen. Very little bamboo linen is manufactured for clothing because it is more labor intensive and costly.”

In a market already overwhemled with specialized labeling, how can we know that the things we buy are actually eco-friendly and sustainable, and not just some ridiculous ploy?

Oeko-Tex Standards“If you are thinking of purchasing bamboo clothing or any clothing that has been made outside the U.S., look for certification from an independent and reliable certification company such as Oeko-Tex, Soil Association, SKAL, KRAV or similar organic or sustainable certification body. Currently, the Oeko-Tex label is the most comprehensive label for insuring that the garment is healthy for consumers but it does not certify the manufacturing processes that produced the garment as being environmentally friendly and sustainable.”

DB’s Etiquette Recommendation: I am no chemist, so I’d love to hear your thoughts on this. Please drop a comment with any tips or advice.
