• A new, slightly controversial article in New York Magazine explores why vegetables are the new meat, becoming the focus of entrees at unlikely restaurants throughout cities famous for fervent foodies. Vegetables Are the New Meat, they say – but they make sure to distinguish themselves from vegetarians, still calling on meat, butter, and cheese for flavor. KFC Grilled Double Down, Veganized

The nastiness of the KFC Grilled Double Down sandwich has been harnessed and turned on it’s head. Unlike the amazingly funny and yummy (but more complicated) Breaded and deep-fried Vegan Double Down over at Vegansauraus, May I present to you the easy-peasy version: The Vegan Grilled Double Down. Two grilled Gardein patties sandwiching Tempeh Fakin’-Bacon and Follow Your Heart Monterrey Jack-Style Cheese and some Vegenaise. Yes I ate it, and so can you. Just make it at home in these simple steps (and you thought a Double Down was when two people simultaneously had massive coronaries while eating at KFC and fell over):

What You’ll Need:

  • • 2 Gardein Patties
  • • 4 slices of Tempeh Fakin Bacon
  • • Gooey Vegan Cheese of your choice
  • • Vegan Mayo
  • • a squirt of mustard, if desired

Directions:

  • 1. In a large, oiled skilled, sautee the patties and fakin’ until golden brown on both sides.
  • 2. Place the vegan cheese, mayo and the bacon in between the two patties.
  • 3. Laugh at yourself.

Taste and Believe: Veggie Grill, Los Angeles

I finally got to try the phenomenon known as Veggie Grill in Los Angeles. It was my last night in LA and a friend nearly punched me out for not having tried it yet. Los Angeles is like a giant, confusing strip-mall, I explained to her. How was I supposed to have just stumbled across it? I’m a New Yorker, I need grids and subways!

We drove over (in a hybrid, of course) ordered their new “cheeseburger” with sweet potato fries, which was ridiculously amazing. This burger hit that late-night, salty, savory, ooey-gooey spot. We also got the breaded cutlet sandwich, the tomato soup, a side of mac and “cheese” and a kale salad. If you are a health-nut, this place is great – but if you have a hankering for a juicy, cheezy, bready, filling indulgence, even better! Next time you’re in Hollywood, don’t pass this up! They even have gluten-free and soy-free options, as well as desserts, daily special soups, and they cater!

Darbster, West Palm Beach, FL

On a recent trip to Florida, I took my family to a new vegan joint called Darbster – named after the owners’ rescued pooch, Darby. I believe that it’s the first and only entirely vegan restaurant in West Palm Beach. We arrived on a rather chilly evening, and the place is an open-air bar-style restaurant with outdoor seating (dog-friendly!) overlooking a canal. Unfortunately for us, the place was wrapped in plastic tarps with heat lamps inside to keep some warmth in, so we didn’t get to experience any of the outdoor atmosphere. We were, however, greeted by a very friendly staff, and the service was quick!

There is a good-sized menu with several raw and gluten-free options, a nice wine list, and several desserts.

The food was good. The first thing I wanted to order was the Kale Chips, but they were out! So we started with the Palm Cakes, which were pan-fried, chopped hearts of palm in a savory pine nut sauce, and were reminiscent of crab cakes. I thought they were delicious, and I’ll have to try to recreate this recipe at home.

My entree was the Gardein filet prepared in a lemon, pine-nut sauce, and my sister got a marinara version with Daiya cheese and tomato sauce. My little side of mac & cheese was delicious. I so wish there had been more. The Gardein filets were a bit too thick, but seasoned well and very filling.

The Beefless Sliders were one of the highlights for my whole family. The special sauce was perfect, and there was just enough contents between the soft sesame bun. This is a must-have if you go. My mother and father (not vegetarians) thought these were the best thing, and that the faux “beef” was delicious and satisfying.

For dessert we enjoyed a coconut-sorbet sundae with chocolate fudge, raspberries, blueberries, and walnuts.

On future trips, I’ll be sure to make reservations for daytime enjoyment of the outdoor seating, or at least a warm night to be in the open air. The next time you’re in south Florida, definitely check this place out! I plan to be back.

Beefless-Tips Stuffed Collards with Eggplant & Shiitake

I recently got to try some of Gardein’s new frozen line, and I experimented with some recipes using their meatless “meats”. They are low-fat and high protein, and taste incredibly authentic. If you are into the taste and texture of meat but want to avoid the ethical, ecological, and social implications of eating animals, this is a pretty great product made from a combination of soy, wheat gluten, quinoa, amaranth, millet and kamut!

I think this recipe for Beefless-Tips Stuffed Collards with Eggplant and Shiitake is easy, delicious and full of nutrients. Enjoy!

WHAT YOU’LL NEED (serves 2):

  • 1 small red onion
  • 6 medium shiitake mushroom heads
  • 1 cup chopped eggplant (about 1/4 of large Eggplant)
  • 1/4 cup mixed olives including juice
  • 1 tbs red wine vinegar
  • 1/4 cup white wine
  • 1 tbs olive oil, for sauteing
  • 2 large collard green leaves
  • 1/2 bag (about 2/3 cup) Gardein Beefless Tips
  • salt & pepper to taste

DIRECTIONS:

  1. Wash 2 large collard green leaves, and set aside on 2 plates.
  2. Bring a large, oiled skillet ( I prefer cast iron) to medium head.
  3. Chop the onion, mushrooms, and eggplant and place in the hot skillet. Add the olives and Gardein Beefless Tips.CollardRoll_Stuffing
  4. Saute on medium heat for about 10-12 minutes, until the eggplant turn golden and begins to fall apart.
  5. Add the red wine vinegar, and white wine and continue cooking for another 2-3 minutes until the liquid cooks off.
  6. Divide the contents of the skillet in half, and scoop each half onto a raw collard leaf.
  7. Fold the leaf over, then flip so the midrib is on the outside and top:CollarRollInstruction
  8. Serve and enjoy!

TIP:

This would go great with some soup. Try my Savory Parsnip or Souper Easy Squash Soup

Gardein …tastes…. like… chicken. I picked up some It’s All Good brand veggie-chick’n in tomato tuscan marinade because it’s made with this really great faux meat called Gardein, and I hadn’t tried it yet. It was really convincing (scarily so, for this more-than-a-decade-vegan), and has 26 grams if protein per serving! Wow.  I prepared it over quinoa with some steamed greens:
